Coconut quinoa chocolate bites

One of my goals lately is to go to sleep at a reasonable time. Therefore, we shall have the recipe and that’s it for this post:

1 15-oz can black beans
1 banana
1 egg
5 pitted dried dates
1/4 cup cocoa powder
1 oz unsweetened dried coconut shreds
1/4 cup rolled oats
2 tbsp chia seeds
1 scoop vanilla whey protein powder (I just eyeballed it)
2 cups cooked quinoa (It was about 1/2 c quinoa uncooked. Follow instructions on the bag to cook)

Preheat oven to 350 degrees F. With a food processor, process black beans, banana, egg, and dates first. Then start to throw everything else in there. Put heaping spoonfuls of the batter onto a baking sheet, spacing each “bite” about an inch apart. I like the rustic look of these cookies when thrown on the pan carelessly. 🙂
