Berry Overnight Oats in a Jar

Berry overnight oats in a jar

1 mashed banana

1-1.5 cup almond milk (or any milk you like)

1 tbsp chia seeds

1/2 cup frozen berries

1 tsp cinnamon

1 cup old-fashioned rolled oats

Optional: 1 tbsp ground flaxseed

Mash the banana on a plate or in the jar. Add all the ingredients and stir well! Start with 1 cup milk but you may need more to submerge all the ingredients in the liquid. The oats will expand overnight and absorb the liquid so you want to add enough milk to keep from being too dry. Refrigerate overnight and devour in the morning.

Spicy Over Easy Eggs with Spinach

2 eggs

Handful of spinach

Sriracha sauce

1 tbsp coconut oil

Fry the eggs with 1 tbsp coconut oil. Add the spinach on top with approximately 1 minute left to cook the eggs. Pour onto plate and drizzle with Sriracha sauce.

Carrot Cake Quinoaties

1/2 cup cooked quinoa

1/2 cup rolled oats

1/2 whole carrot

1/2 tsp cinnamon

1 tbsp chia seeds

Put all ingredients into a mason jar and refrigerate overnight. Enjoy in the morning!

Tropical Berry Frappuccino

Frozen “cubed” espresso

Frozen half banana

1 cup almond milk

Frozen berry mix (raspberries, blackberries, blueberries)

Frozen mangoes

Blend all the ingredients together. Voila!

Sprouted French Toast with Strawberries and Creamphoto (2)

1 egg
A dash of cinnamon
1/4 cup unsweetened almond milk
2 slices Silver Hills Squirrelly bread
Coconut oil spray
2 wedges Laughing cow original creamy swiss
4 strawberries (or more) sliced
 
Zoey’s delicious drip coffee + almond milk
Whisk the egg, milk, and cinnamon in a bowl with a fork. Put a pan on the stove, set to medium heat and spray pan with coconut oil. Dunk one slice of bread in egg mixture. Cook the bread in the pan. About 3 minutes on each side or until slightly browned. Repeat with the next slice of bread. Spread one wedge of cheese for each slice of bread. Top of sliced strawberries.
I love Fridays.
  1. It’s Friday.
  2. I start work later. Thus I have time for my french toast.
  3. It’s close to the weekend which means more time to cook and bake more delicious items.

I drink approximately one cup of coffee almost every day. I just can’t get enough of the taste of coffee mixed with almond milk. Or even better, soy milk. I was talking to Zoey (my housemate) about this while I was devouring my breakfast shown above. We both concluded that drinking a nice cup of coffee is an excellent start to our day. It warms our heart. Literally and figuratively.

It is sad news that everyone will have moved out of this house by the end of June. I have developed great relationships with Meghan, Zoey, and Kirsten. I never realized how much of a recluse I was throughout my college years until this year when I moved in with these girls. During school I mostly studied and worked out by myself; went to the occasional grab-a-date and party. Now I know what it feels like to come home to the warm welcome of wonderful friends.

Meghan became my best friend over the past 5 months when I moved into this house even though we had met each other the Fall of 2008 when we attended a free spin class at the gym. She is now back home in Pullman. My boyfriend and I will be taking a road trip to visit Meghan 4th of July weekend!!
